1st Drink

Gentlemen’s club downtown, near the Windsor now Gare Central train station. Fireplace lit on a cold slush falling from the sky day. Idea of leather and a promise of spring; imagined but not yet seen. Layered fizzy drink with stout sweetness from beet and spicy orange bitter, elevated by boreal wooden notes of Lily liqueur and lightened by zesty lemon La Croix.

1 1/2 oz liqueur Lily

1 oz beet juice

3 drops Classic Creole or Peychaud's bitters

juice of 1 lemon slice

Lemon La Croix or other lemon soda water

ice

* buy beet juice, don’t make it. It's not worth it.

Layer ingredients in a 10 oz glass in the following order

1. beet juice

2. bitters

3. ice - filling glass approximately 3/4 of the way to the top

4. liqueur Lily

5. lemon La Croix or lemon soda water

6. juice of lemon slice

Garnish with orange zest and dehydrated beet slice
